About the tea: This organic matcha is grown in Kirishima in Kagoshima Prefecture, Japan. Kirishima is surrounded by active volcanoes which contribute to making the soil rich. It is a blend of seven different cultivars mainly “Okumidori” cultivar. They are grown with clean “Kirishima” spring water and organic fertilizer made by the farmers. The tea leaves are shaded about three weeks before harvesting. After toasting in a special-made oven, tea leaves are milled/powdered into ~15 micron particles. By blending different cultivars, the tea blender targets refreshing but not too monotone to achieve a more complex taste with creamy finish. Also he manages the proportion of each tea leaves to create a vibrant and bright colored powder.
